7. Vegan Options
Vegan options are taking center stage. In hopes of trying to get on the vegan trend, mobile food truck owners would be crazy to not add some vegan options to their menu.

Although serving meats and having vegetarian options might seem a bit hypocritical at your food truck, it is important that you can serve everyone who comes to your customized truck. After all, people love mobile trucks because they are convenient.
5. Locally Sourced Meat
Okay, meat, you can come back to the party again. Not everyone is down on meat, and a lot of people who are still eating and enjoying this delicious stuff are becoming more and more interested about where their food is actually coming from. Get those people’s back by going local, kitchen truck owners.
4. Insects
As we have brought up in a previous article, “bugs are making their comeback.” Although this might sound disgusting to some truck builders, it is important to give the people what they want — and people (at least some of them) want insects.
3. Seaweed
Seaweed is the new kale, or that is at least what so many different websites are claiming. Clearly, the food industry is changing, so that means the food truck industry has to change with it.
Note: Spam musubi, which features seaweed, is very easy to make — and it tastes amazing.
2. Coffee
It’s no longer a bad thing to drink a pot of coffee before you are completely ready to take on the day. Okay, so that might be a bit extreme, but people all over this country are accepting coffee once again. The best part about coffee is the fact that it is very easy to make, it doesn’t cost a whole lot (for food truck businesses or the customer) and food lovers — well, more like coffee lovers — always crave it. Therefore, your mobile kitchen trailer needs to serve up coffee. You know, if it doesn’t already.
